Comment:I have been the head chef at a long-established restaurant in Osaka for many years. The reason I chose Shima is because of the sea, the ingredients, and the people. I have loved surfing since I was a teenager and have been going to Shima for over 30 years. During that time, I gradually became fascinated with the place called Shima. I use 100% cottonseed oil, Okinawan salt, and dashi made from bloodless bonito from Kagoshima and Rishiri kelp from Hokkaido, and Gaia water.
